Guys, how can something so simple be so spectacular! Do you know when the rice turns really brown and takes on all the flavor of the meat? Too delicious!!! The quantity indicated here is for 4 (large) portions, ok?
Ingredients:
- 1 kilo of pork ribs (fresh, don’t use smoked ones as they won’t look the same);
- 1 chopped onion;
- 3 chopped garlic cloves;
- 250g of raw rice;
- 2 tablespoons of soy sauce (shoyu);
- Salt and green scent according to your taste.
Start by seasoning the ribs as I taught you –> here. Let it rest in the seasoning for at least 2 hours (in the fridge). Now follow the steps:
1. In a pressure cooker, quickly sauté the ribs in oil or olive oil, add 150ml of water, cover the pan and place over high heat. As soon as it reaches pressure, lower the heat and count 15 minutes. Turn off the heat, wait for the pressure to release and open the pan. It will be like in photo 1.
2. Add the garlic and onion, soy sauce and mix well. If the water is dry, add a little more (1/2 cup is enough). Keep the mixture on low heat, stirring occasionally to soften the onion a little. Stir for about 10 minutes.
3. Add the rice.
4. Mix the rice with the meat and keep on low heat, stirring for about 5 minutes.
5. Cover with water and stir a little more. Taste the water, it must be very salty, if not, add a little salt. Cover the pan again and as soon as it reaches pressure, reduce the heat to minimum and keep it for 6 minutes. Turn off the heat and wait for the pressure to release naturally.
6. Open the pan and cover with green chilli.
* Attention: The times indicated in this recipe may vary because the pans change depending on the brand, having a more or less thick bottom, as well as the height of the fire changes from brand to stove brand.
