Here in Sorocaba, the ham sandwich is well known, some establishments even fight for the title of “The King of Pernil”. And then my husband asked me to make it and as I had a frozen pork leg, I thought it was a good idea.

Of course, I adapted the recipe to make it as simple as possible and this is how I did it:

I put it in the pressure cooker (without sautéing):

  • 1 onion cut into cubes;
  • 2 cloves of chopped garlic;
  • 1 piece of chopped red pepper (about 3 tablespoons);
  • 1 piece of chopped yellow pepper (about 3 tablespoons);
  • 1 can of peeled tomatoes, I already buy the version with chopped tomatoes (can be replaced with 2 chopped tomatoes);
  • 200 ml of water;
  • 1 envelope of powdered meat broth;
  • 5 tablespoons of soy sauce (shoyu);
  • 1 kilo of ham cut into cubes.

I covered the pan and placed it over high heat. As soon as it reached pressure, I lowered the heat to low heat and left it for 30 minutes. I turned off the heat and let the pan rest so the pressure could release normally. When opening the pan, if your ham is cooked it will shred easily with the help of a fork. If it is still hard, return the covered pressure cooker to the heat and leave for a few more minutes. You may need to add a little more water at this stage.

I shredded the meat inside the pan. I added 1/2 cup of chopped olives and a handful of green chilli. I returned the pan to the heat to cook the sauce. I adjusted the salt and added black pepper.

Then to make the sandwich, you cut the bread in half, put a slice of cheese and the hot meat on top! A good sin!!!!

One kilo of ham makes about 15 snacks. You can freeze the finished filling (that’s what I do here). And oh, this ham with soft polenta or over pasta is amazing!
