These days I made some chicken and it was so good that I decided to share it here, even though it’s very simple to make! I used Catupiry®, but it can be any firmer cream cheese, as long as it’s not the terrible ones with a starchy taste, okay?
I used half a boneless chicken breast and divided that half into 2 fillets that were taller. The first step is to season the chicken well at least 1 hour in advance. I use my seasoning recipe (see here), but you can use any seasoning you like.
Next, I grilled the chicken breast on both sides.
I covered it with Catupiry® and a little grated parmesan on top. Then it was just a matter of putting it in the oven to brown. If your oven has a grill (heating element at the top) this is a good time to use it.
The parmesan melts and forms a crispy, golden crust around it that looks sensational! It was delicious!
