This is a recipe that everyone needs to learn because it’s perfect for Sunday lunch or that fancy dinner, not to mention it’s easy to make and yields a lot! All you need to go with it is white rice, mashed potatoes and a green salad. It can be made with other meats such as breast, skirt steak, termite, and even filet mignon (but in this case you don’t even need to use pressure). Do you want to write it down?
Ingredients:
2 col. olive oil (soup);
1 onion;
2 garlic cloves;
1 bay leaf;
1 col. tomato paste (soup);
1 col. Worcestershire sauce (soup);
1.2 kg of lizard seasoned with salt and pepper;
2 cups. (tea) water (480ml);
Way of doing:
Place everything in the pressure cooker in the order above. When pressure reaches, lower the heat to minimum and leave for 40 minutes.
Remove the meat, strain the sauce and return it to the pan.
Mix 2 tablespoons of wheat flour with 100 ml of Madeira wine or any other dry red wine and add to the strained broth. Boil everything until reduced. If necessary, add a little water to make the sauce more liquid. Add 100g of mushrooms. Taste and adjust the salt in the sauce;
Slice the meat and serve with sauce.
