Hello everyone, and welcome back to Red White and Vegan! We know that there isn’t always time to spend making meals, so we thought we would show you how to make a couple of our favorite quick meals that only take a few minutes to to whip up. Both are incredibly tasty, and require only a few simple ingredients. The recipes are listed below. Enjoy!
Vegan Tuna Salad
1 can drained and rinsed chickpeas
2 tbs vegan mayo
.5 tbs mustard
sprinkle of salt and pepper
2 tbs onion
2 tbs bell pepper
2 tbs pickles or relish
Combine all in bowl or food processor, and blend until desired texture. Enjoy!
Chickpea BBQ
1 can drained and rinsed chickpeas
2 tbs onion
.5 tbs olive oil
1/4 cup BBQ sauce
1/4 tsp chili powder (optional)
1. Combine onion, oil, and chickpeas in pan over medium/high heat. Cook for 7 – 10 minutes.
2. Add BBQ sauce, and chili powder. Heat through.
