Recipe 1: Chicken Sweet Potato Curry
Ingredients:
Chicken Breast
1 can reduced fat coconut milk
6oz can Tomato Paste
1 TBSP Paprika
1 TBSP Cumin
1 TBSP Curry Powder
1 TBSP Salt
1 TSP Corriander
1 Onion cut in quarters
5 garlic cloves minced
Sweet Potatoes – Peeled and chopped
Broccoli
*lemon & cilantro optional

Directions:
Place coconut milk & tomato paste in your crockpot and stir. Add all seasonings, onion, garlic & stir. Add chicken to the crockpot, cover & cook on high for 4 hours.

After 4 hours, remove the chicken and add the cubed & peeled sweet potatoes – stir into sauce and cook for 1 hour.
.
After 1 hour, add broccoli to the crockpot and finish cooking for another 45-60 minutes.

Spoon mixture in a bowl, top with salt, lemon juice and cilantro!

***Ways to repurpose***
-Add butternut squash or white potato
-Make into a salad
-Make into a rice bowl (can use white rice, brown rice, cauliflower rice or a mixture of rice & cauliflower rice)
-Take curry chicken and make lettuce wraps, tacos, eat with Naan bread

Recipe 2: Crockpot Korean BBQ Pork
Ingredients:
-2-3lbs Pork Loin
-Sauce: about 1 cup- Korean BBQ, General Tso, Teriaki ( we love korean bbq & general tso and i just look for the best calorie sauce)
-Garlic Powder
-Curry Powder
-Salt

Directions:
Cover & cook on high for 4-6 hours or low for 8 hours.

Ways to enjoy your korean BBQ Pork!
-Tacos/Lettuce Wraps
-Rice Bowls (can mix in cauliflower rice to add veggies and more volume) to your rice bowl add steamed bell peppers, steamed broccoli, sauteed mushrooms, tomatoes or salsa, guac, shredded lettuce & lime juice! Can drizzle on a crema like I made or a Bolthouse Farms salad dressing like Cilantro Avocado!
-Potato Hash: Use any potato and/or butternut squash and mix with same veggies mentioned above in rice bowl preparation
-Fried Rice: Rice, veggies, Whole Egg
-Burrito

Recipe 3: Spaghetti Squash & Chicken Meatballs
Ingredients:
1 medium spaghetti squash cut in half, seeds removed
1lb ground chicken
tomato sauce
Broccoli – steamed
salt
Garlic Powder
21 Seasoning Salute (or any Italian Blend)
Red Pepper Flakes *optional
.
Directions:
Add about 1 cup tomato sauce to the bottom of your crock pot. Season squash with S&P, add to crock pot on top of sauce.
Season ground chicken with spices and roll into meatballs.
Place meatballs on the sauce, sprinkle with salt and over with more cause. Add red pepper flakes.

Cook on High for 4 hours. Remove squash, stir in broccoli to reheat.
*Add fresh basil and parm cheese when you eat it! YUM!

How to repurpose:
There is not much more you can do with spaghetti squash and meatballs but you could add spinach and shrimp if you have left over squash! Or make gluten free spaghetti and have a mix of the spaghetti and squash!

  3. So I tried the curry chicken bc I usually make mine on the stove top. I like it a lot. My crockpot cooks fast so my chicken was done in 2 1/2 hours. Still very good and healthy. Thank you!
