Broccoli risotto recipe

Ingredients

  • 400 g of arborio rice
  • 1 medium onion very finely chopped
  • 2 tablespoons of butter
  • 1/2 cup dry white wine
  • 1 and 1/2 liters of chicken broth
  • 4 tablespoons grated parmesan cheese
  • 200 g of broccoli (only the flowers) (check out 4 tips to know when broccoli is spoiled)
  • 100 g semi-cured Minas cheese, cut into cubes
  • 1/2 cup fresh cream
  • Salt and black pepper to taste

Preparation mode

  1. First, we will sauté the finely chopped onion in half the butter.
  2. At this stage it is important not to let the onion brown, just keep it soft.
  3. Then add the rice arborio and sauté for a few minutes and then add the white wine.
  4. Let it evaporate over high heat and then start adding the chicken broth little by little.
  5. As the risotto liquid dries, add more chicken broth.
  6. When you reach half the broth, add the broccoli and continue cooking.
  7. Then add the cheese cut into cubes and the cream for another two minutes until the cheese starts to melt.
  8. Then, remove from heat and add the rest of the butter and Parmesan and mix.
  9. Finally, season with salt and black pepper to taste.
  10. Ready, the broccoli risotto is ready to be served.

Tips for preparing broccoli risotto

  • As for the chicken broth that will be added to the risotto during cooking, Ideally, the broth should be at a temperature close to boiling.
  • In fact, you can use homemade vegetable broth or chicken cooking broth, which will add even more flavor to the risotto. But if you don’t have it ready, you can dissolve 1 tablet of vegetable broth in 6 cups of boiling water.
