Sausage ragu recipe

Ingredients

  • 1 kg of pepperoni sausage (learn how to make a delicious pepperoni pie)
  • 4 cans of peeled tomato
  • 1 carrot
  • 1 stalk of celery
  • 1 onion
  • 3 cloves of garlic
  • ½ cup of red wine
  • 1 cup (tea) of water
  • olive oil to taste
  • 1 teaspoon of fennel seeds
  • 1 bay leaf
  • 1 bunch of basil
  • Salt and black pepper to taste

Preparation mode

  1. First, let’s prepare the recipe ingredients. So, start by peeling and chopping the garlic cloves and onion, wash, peel and grate the carrot, wash and discard the celery leaves, chopping only the stem into small cubes.
  2. Then, open the sausage segments, removing only the meat, and break them into smaller pieces.
  3. Now, in a large pan, heat the oil and brown the sausage meat in parts, letting it brown for 5 minutes and stirring occasionally to brown evenly.
  4. Then, transfer the browned meat to a bowl and repeat the process with the rest of the meat, always drizzling with olive oil.
  5. In the same pan that browned the meat, sauté the onion for about 2 minutes and season with salt and black pepper.
  6. Add the carrot and celery and sauté again for another 3 minutes.
  7. Now add the chopped garlic, fennel seeds, bay leaf and stir for 1 minute to release the aroma and flavor.
  8. Therefore, return the sausage to the pan, add the red wine and mix well, letting it cook until all the liquid has dried.
  9. Now, add the peeled tomato with the liquid and add the water.
  10. Mix everything well and cook until it boils, adjusting the seasoning if necessary.
  11. Lower the heat and let the ragu cook for about 1 hour with the lid half open, until the sauce thickens.
  12. At the end, add the basil for flavor and it’s ready to serve.

Tips for preparing sausage ragu

  • It is very important that the sausage is not cold when preparing it. Therefore, the tip is to remove the sausage from the refrigerator a little before starting to prepare the ragu.
