When you find yourself in the following situation: I have a questionable amount of cherries fresh frozen and I need to use them as soon as possible! I have the perfect solution for you!
Blondie of cherries! It’s very practical, just mix everything together. Okay, you need to melt the butter. Other than that, it’s super quiet.
It is a type of low cake, similar to a brownie (read more: Quick Brownie). The main difference is that in the blondie no chocolate or cocoa to add flavor and color. And it is suggested that the name derives from the more tawny and that it was the original brownie, since chocolate is a recent ingredient (early 20th century).
They maintain practically the same characteristics: it is dense, super rich and moist. It goes well with a cup of coffee or tea! Oh, I swear in the photos they are cherries and not black olives, hahahah.
Cherry Blondie: Light Cherry Brownie
Makes: 12 pieces (~6x7cm, approximately)
- 100 g butter without salt
- 30 mL vegetable oil (corn, canola, sunflower)
- 180 g crystal Sugar
- 1 ovo
- 15 mL vanilla extract (or 05mL essence)
- 180 g wheat flour
- 03 g chemical baking powder (about 1 tsp)
- 1 g refined salt
- 250 g fresh cherry (pitted; or frozen; read: Remove Cherry Pits)
- 75 g milk chocolate (drops or chopped; or milk; available)
1 cup: 250mL | 1 tablespoon: 15mL.
- Heat the oven to 180ºC. Line a 21×30 cm pan with baking paper. Reserve.
- Melt the butter (direct flame or microwave), without boiling. Add the oil, mix.
- Add sugar and mix well. If it is too hot, wait until it is warm so as not to cook the egg.
- Add egg and vanilla, mix.
- Add wheat flour, chemical yeast and salt. Mix just enough to combine. It’s a firm dough.
- Add the filling ingredients, in this case, cherry and chocolate drops. Mix.
- Transfer to the prepared pan, spread and level well.
- Bake at 180ºC for about ~35 minutes, it will be golden on top.
- Remove from the oven and let cool for 20 minutes before cutting or removing from the pan. When hot it is very delicate.
- After it cooled, I added an extra touch: I poured melted chocolate on top. It’s not necessary, just if you want.
- Cherries: you can replace it with fruits that don’t release a lot of water during cooking, such as: chopped banana (~3 und), blueberries and dried fruits. Or add nuts in general (~150g).
