A party without cake is just a meeting, Julia Child would say. And to celebrate the achievement on YouTube NextUp Brasil I decided to make cupcakes in the colors of our beloved YouTube: red, white and black.
The result was a delicious Vanilla’s cupcake with jelly Red fruits covered with Buttercream de Chocolate. It can’t be bad, it can’t be!

There’s no cherry on top, but a chocolate plate with the most famous play button in this galaxy. Yes, it is edible! All made with colored white chocolate, it was beautiful.

Vanilla, Red Fruit and Chocolate Cupcake
Makes: 12 standard size units
Ingredients: DOUGH
- 170 g wheat flour
- 6,5 g chemical baking powder
- 01 g refined salt
- 45 g butter without salt (iced)
- 80 g vegetable oil (neutral flavor)
- 175 g crystal Sugar
- 02 eggs
- 75 g unflavored yogurt
- 10 mL vanilla extract (or 03mL essence)
- 125 g red fruit jelly
1 cup: 250mL | 1 tablespoon: 15mL.
Mode: MASS
- Heat the oven to 180ºC. Prepare the cupcake pan with the paper cups (nº0). Reserve.
- In a bowl mix wheat flour, baking powder and salt. Mix well and set aside.
- In the bowl of a mixer, mix the butter, oil and granulated sugar. Beat (with a paddle attachment, preferably) until it turns into a pale yellow cream, about 5 minutes. Clean the sides from time to time.
- Add eggs, yogurt, vanilla and continue beating.
- Add the dry ingredients and mix with a whisk just to combine.
- The jelly will be added little by little to the dough, but mixing very little, just to mix it slightly. I did this step twice. In the video it is better explained.
- Divide the dough between the molds, filling about 3/4 full.
- Bake at 180ºC for around 25-30 minutes, it will be lightly golden on top. Do the toothpick test.
- Remove from the oven and let cool for 10 minutes before transferring to a wire rack to cool completely. It must be cold to be decorated.
Mode: COVERAGE
- For the buttercream, follow the instructions for Swiss Meringue Buttercream. 01 recipe required.
- When melting the chocolate, wait about 10-15 minutes before using. If it’s hot, it will melt the buttercream. Do not use ceramic containers, the material retains heat.
- Add the melted chocolate to the ready-made buttercream and mix well. If using cocoa, add it too.
- Roof: chocolate ganache can be used instead.
