The Pig House
Led by chef Jefferson Rueda, it is the best restaurant in Brazil, according to The World’s 50 Best. And now he wants to demystify the way people think and consume pork. Therefore, this time, they created the new vegetarian menu “Da Roça para o Centro”. After all, most of the ingredients that make up the tasting come from the countryside, in a version with or without pork. The inputs come from São José do Rio Pardo, in the interior of São Paulo, more precisely from Sítio Rueda, owned by the couple Janaina and Jefferson Rueda, where they have retreated over the last year to literally put their hands on the land, create, plant, harvest and cooking.

The new menu takes a tour through the flavors of nature, and is divided into five sections: create, plant, harvest, cook and sweeten. Some classics are still there, such as, for example, the papada sushi and the pancetta crackling with guava paste, which gained versions with mushroom and coalho cheese, respectively, for the vegetarian menu. The tartare, instead of pork, is turnip with mushrooms, sprouts and flowers.
In the “Spoon” section, there is pumpkin capeletti with mushrooms and Pedra Branca cheese, as well as Portobello milanesa with citrus sauce. In the main dish, instead of the famous Porco San Zé, sweet potato gnocchi is accompanied by “what came from our garden”.
Finally, the desserts are co-designed by chef-pâtissière Priscilla Mei. There are fruits from the garden, with cocoa honey and lemon sorbet and also the new version of “pamonha, tamale, tamale”. In addition, the pairing includes vermouths and liqueurs produced by Janaína Rueda.
