About 6 months ago I gave a recipe for milk mayonnaise which was the biggest success. It really is very tasty, but this one is better. I remembered that my mother used to make a garlic paste with French bread that was incredible and I decided to adapt it. I look VERY similar to that one green mayonnaise Of the famous snack bars, I would even say it got better!
It’s very simple, just put it in the blender:
– 1 stale French bread without crust, coarsely chopped;
– 1 level teaspoon of salt;
– 1/2 teaspoon of crushed (or finely chopped) garlic;
– 100 ml of milk.
Beat well and as you beat, pour a trickle of oil through the smaller lid of the blender. More or less 150 ml of oil will be used. Add oil slowly and steadily until it becomes a very firm paste. Okay, this is a basic paste, with a light garlic flavor and you can flavor it however you want, just mix it with the other ingredients.
To the green mayonnaise I added 1 teaspoon of mustard and 1 cup of coarsely chopped green onion and blended some more. It was perfect!!! Makes about 250ml of paste.
Suggestions for flavoring the basic paste:- Add just a little more garlic. It turns into a wonderful garlic paste.
– Add sun-dried tomatoes.
– Fresh or dehydrated herbs.
– Black or green olives.
– Tuna.- Cooked carrot.
– Cooked beetroot.
Anyway, from this paste you can make a thousand more!!!
* I know you’re going to ask if you can use olive oil, you can, but it’s not as good because it has its own characteristic flavor and will affect the final result, but perhaps the olive oil goes well with olives or sun-dried tomatoes.
