In the video of sopa of vegetables I asked the people who follow the YouTube channel which recipe they wanted me to make and what Cream of Potato with Bacon it had more orders than the caldo verde. Anyway, I’ll try to do both, but today it’s the winner’s turn!

Write down the recipe ingredients:
- 2 tablespoons of butter
- 2 tablespoons of olive oil
- 1 sliced onion
- 1/2 kilo of potatoes, chopped into medium pieces
- 1 liter of vegetable broth (homemade or 1 tablet/packet dissolved in water)
- 100 ml or half a box of cream
- Salt and black pepper to taste
- Parsley and fried bacon to put on top (to taste)
First you must caramelize the onion, to do this just sauté the onion in butter and olive oil over low heat, stirring constantly until it turns golden. Slow process that can take up to 30 minutes, but makes all the difference in flavor.
With the onion base ready, add the potatoes and cover with the vegetable broth (homemade broth recipe here) and let it boil until the potatoes are soft. Now add the cream and blend everything in a blender or use a mixer. Adjust the salt, sprinkle pepper and add parsley.
Brown 1 cup of chopped bacon. It can be in the frying pan or microwave (see here how to do it) and place on top when serving.
*This recipe makes 4 servings, but if you want to make it again, it’s best to consider 2 servings.
