Parmesan basket I think is a super idea! It’s easy to make and you can make 1000 fillings. Here I made a “bed” of salad (I don’t remember if it was watercress or arugula lol)…. I filled the basket with diced boiled potatoes, mixed with mustard cream, mayonnaise, ricotta cream, green chilli, salt and pepper.
To make the basket, grate enough parmesan to cover the bottom of the frying pan (non-stick and ungreased). Place over medium heat. The cheese will melt. At this point I use a paper towel to absorb the oil that collects on the surface. When it browns, it’s ready.
Line a glass of palm hearts or another container with aluminum (I used a dessert jar). Remove the parmesan disc from the pan with a spatula and place it on the aluminum foil (the whiter side that was not in contact with the pan). But do it quickly because it hardens quickly and can no longer be molded.
