If you don’t like the potato, at least give it a few punches to relieve stress, which works well for me, since the move is on Saturday! I don’t know if this recipe is originally exactly like this (my Portuguese friends can tell me), but I like it this way:

I cook large potatoes with well-cleaned skins for 45 minutes in boiling water. I remove it and let it rest on a clean kitchen towel. Wait for it to cool down before punching the animals, okay?

After about 15 minutes, I punch each potato from top to bottom (be careful not to get excited and smash the potato because it is soft)!
Next, I place the already beaten potatoes in a refractory greased with olive oil, cover with small pieces of butter, salt (I used gourmet salt) and fresh rosemary. I put it in the oven for another 10 minutes.

Before serving, I drizzle with more olive oil (I used rosemary to give it more flavor).
Hurry up, the day is just beginning and today there will be cleaning in the new house!
