“You are” so connected that quinoa is a more than complete food, right? Needless to say! So, I’m trying to include some healthier things in my diet, in addition to the teas I’m always drinking.

For this salad, we will use:
1 cup quinoa grains
1 Japanese cucumber (the thinnest one)
1 tomato
½ onion
3 spoons of green scent
2 spoons of fresh mint

You cook the quinoa with 2 cups of water. After about 20 minutes of boiling you will try it, it will be ready when it is soft and you will notice that it will release small rings. Turn off the heat and drain the quinoa using a sieve. I rinse with cold water to stop the cooking and drain well again.

Now just chop the ingredients very finely and mix everything.

Then season with salt, black pepper, lemon juice (about 3 tablespoons) and olive oil.
