Since this annoying cold doesn’t want to go away, there’s nothing better than a soup or cream and if it’s a light and tasty recipe like this, even better, right? And to improve one more “cadim”, the cracking recipe is very easy to make, so there’s no excuse, let’s do it?
To begin, sauté 1 small chopped onion in 2 tablespoons of butter or margarine until it is very transparent.
Add ½ cauliflower separated into florets, 1 envelope or tablet of vegetable broth, cover with 1 glass of skimmed milk and top up with water until it exceeds 2 fingers above the level of the cauliflower.
Use a large pan, as the milk will rise when it boils. Keep boiling until the cauliflower is soft.
Put everything in the blender, add 1 tablespoon of wheat flour, beat well and return to the heat until it thickens. If it’s too thick, add more milk. When it reaches the appropriate texture, turn off the heat and add 1 tablespoon of cottage cheese or light cream (optional). Sprinkle with chives or grated parmesan and serve warm.
