Carrot Cream with Smoked Ricotta

I’m already home, I’ve already done my post-trip cleaning and all I wanted after the “carnivorous orgy” in Uruguay was a light, vegetarian meal. Many people think that vegetarian food is tasteless, but it can be wonderful, let’s lose this silly prejudice?


I sautéed 2 chopped garlic cloves in olive oil, added 3 large sliced ​​carrots, 1 tablespoon of dehydrated vinaigrette, 1 tablespoon of dehydrated onion, 1 teaspoon of powdered ginger, covered with vegetable broth ( see how to do it here) and let it boil until the carrot was soft. It was necessary to add a few more drops of water as it evaporated as it boiled.

I took it off the heat and blended it with the mixer (but it could be in a blender). I added 1/3 of 1 box of cream and once again used the mixer to make a cream. On top I grated a good portion of smoked ricotta. The sweetness of the carrot with the spicy and smoked ricotta was super balanced! A delight!

* Smoked ricotta is usually found in large supermarkets on the sliced ​​cheese shelves and is very cheap!
* Dehydrated vinaigrette and dehydrated onion are seasonings like those in a bag (like cinnamon sticks, oregano…) and are available in most supermarkets.
