I know this recipe is very tasty. It’s already appeared on TV and on several blogs, but guys, the train is great! Crazy lol!!!! The recipe is from chef Rodrigo Oliveira from the Mocotó restaurant.
I reduced the recipe a lot because I was afraid it wouldn’t work out and it still made a very large portion (for about 6 people). I used:

  • 240 ml of milk
  • 120g tapioca pearls
  • 120g of coalho cheese
  • salt and white pepper according to your taste


It’s very simple:
Mix the cheese with the tapioca.
Boil the milk and off the heat add the cheese mixture with tapioca.
Stir well until it cools a little and thickens. Adjust the salt and add the pepper.
Place in a container lined with plastic wrap and let cool at room temperature.
Cover with more plastic wrap and refrigerate for 4 hours. Unmold, cut into cubes and fry in hot oil. I can tell you that they stick to each other when frying, but in the end it works. Serve with pepper jelly, it’s a scandal!
