To make this cream, I used a pressure cooker, but if you’re a bit squeamish (please, right?) you can cook it in a normal pan.
I used 1 large cassava (baroa potato), 2 yams and 1 potato (I put this together because it was getting old in the fridge). You can change the proportions of the vegetables according to your taste.
I sautéed a chopped onion in olive oil, added 2 chopped garlic cloves, the vegetables, 1 tablet of vegetable broth, a freshly ground black pepper and covered it with boiling water. You don’t need a lot of water, just until it’s 1 finger above the level of the vegetables.
If you make it in a pressure cooker, just cover it and after it reaches pressure, leave it for 10 minutes (low heat). If you do it in a normal pan, just let it cook until the vegetables soften, you may need to add more water as it evaporates.
After the vegetables cook, just blend them in a blender or with a mixer. If it becomes thick like a puree, which is what usually happens, just add milk little by little while beating, until it reaches the consistency you want. Yes, actually milk, because it is creamier.
If you are using cold or iced milk, you may need to return your cream to the heat or microwave because no one deserves cold soup, right?
At the end, adjust the salt, add 1/2 cup of grated parmesan and 3 tablespoons of chopped parsley. Delicious in this cold weather that is coming!!!!
