Do you know this rice noodle very light and as gluten? Wow!!! I already did one Bifum salad using Kani, but like in the kitchen we are always modifying one little thing here and there and improving the revenueshere’s the newest version and the one I like the most.
Salad ingredients:
- 150g bifum pasta;
- 1 Japanese cucumber (small);
- 1 carrot (small);
- 5 slices of ham;
Sauce:
- 3 tablespoons of rice vinegar or white vinegar;
- 2 teaspoons of sugar;
- 1 teaspoon of salt;
- 1 teaspoon of sesame oil (or olive oil);
- Black sesame to decorate.
Grate the cucumber and carrot. Place them in a sieve and add a tablespoon of salt and let rest for half an hour. The salt will make it dehydrate and release a lot of liquid. After this time, rinse well, drain and set aside.
Chop 5 slices of ham into thin strips. Cover the Bifum with boiling water and let it rest for 2 minutes. Drain and add ice cubes to cool quickly.
Mix the beef, carrot, cucumber and ham. Mix all the dressing ingredients (except the sesame seeds) and drizzle over the salad. Sprinkle the sesame on top.
