Even in the rush that I experience from time to time, I have time to meet cool people online. And on one of these opportunities I met Cida Abreu. I started following her posts on Facebook and that’s how I met this Kneaded Bread recipe. Cida between a thousand and one uses (what a studied woman!) is a skilled cook and said the recipe was good, so I went to test it. Worth it!
This recipe is on 2 cool blogs that you can see Here and Here.
Ingredients:
- 1 glass of warm milk with an egg inside (240ml)
- 6 col. sugar soup
- 1/2 cabbage salt soup
- 4 col. of margarine or butter
- 3 cups of wheat flour (cup used: 240 ml)
- 1 col. instant dry yeast soup
I did it in bread machine adding the ingredients and choosing the “Dough” cycle, which means it will knead and let it rise. But if you don’t have a machine, just mix all the ingredients and force it into the muque: knead for about 10 minutes and let it rise in a warm place for 1 hour or until it doubles in volume (as it’s cold, you may need up to 2 hours).
As I said, I put everything in the machine, let it beat and took it out after it had risen (from now on you do the same thing if you are doing it without a machine), I kneaded it a little by hand to remove the air, I put it in a large English cake pan. , covered it with plastic wrap and left it in the oven to rise again. A good tip is to place a container of freshly boiled water inside the oven to keep it warm and moist, so the bread rises well. After 2 hours of growing again, I made a cut on the top with a knife and brushed on egg yolk. I baked it at 180ºC, in my oven it took 25 minutes (but my oven is strong, you know?). Look how beautiful!
So for those who don’t have much experience with bread, the order is generally as follows (which was used in this recipe):
- Mix ingredients.
- Knead for about 10 minutes.
- Let it rise (1 to 2 hours)
- Knead to remove the air (just 1 minute is enough here).
- Model or put it in shape.
- Let it rise (1 to 2 hours).
- Assa.
