I’m reposting this recipe that was sent a long time ago by reader Fabíola who read on the blog that I was too lazy to make it bread and then he decided to help me with this recipe for homemade soft dough bread. As it yielded very little, I increased the amount because I wanted plenty of it, so I took better photos and also recorded it on video (which you can see at the end of the post, well explained in just over 2 minutes, everything quickly and without fuss!).
The texture of this bread is a little more airy, more like a cake, but it’s fluffy and I personally really like it.
The recipe
Ingredients:
– 360ml of Milk;
– 2 col. (soup) butter but it can be unsalted margarine;
– 2 eggs;
– 3 cups. (tea) unleavened wheat flour;
– 2 col. (soup) sugar;
– 1 col. (dessert) of salt;
– 1 cabbage (soup) dry biological ferment;
Heat the milk with the butter until it melts, but if it gets too hot, wait for it to cool before using it in the recipe. It has to be warm, if it’s too hot it will ruin the yeast.
Add all the dry ingredients, then make a well in the middle and add the egg and liquids and mix everything. It’s a soft dough, like cake dough.
Let this dough rest for 30 minutes. I usually place a container of freshly boiled water in the microwave or oven with the dough together (see video). The heat and moisture from the heated water helps the dough rise, especially on cold days.
After 30 minutes the dough will rise slightly (it will not double in volume). Place in a pan greased with butter or margarine and sprinkled with flour. I use the English cake pan, mine measures 10 x 24cm, but it could be a little bigger, as it grows a lot above it.
Preheat the oven to 180ºC for 5 to 10 minutes.
Put the dough to bake. The time will vary depending on the brand of oven, but in general it is 30 to 45 minutes (keep an eye on it and only open the oven after 30 minutes so the bread doesn’t wilt).
