Freezer Meals are one of my favorites in the fall. School starts next week for us, along with soccer and our other activities. That being said, I need a little help for dinner. Freezer Meals are my favorite thing to pull out, throw in the IP and be on my way! Then when we get home – dinner is ready!

Fiesta Chicken:
Ingredients
1 Pound Chicken Breast cut in 1″ chunks
16 oz Can of black beans ( drained)
1 Pepper chopped
16 oz can of corn (drained)
2 Cans Rotel Tomatoes with Chillies
4 oz can Jalapenos (optional)
1 packet taco seasoning
1 packet ranch seasoning
2 Cups Rice uncooked
2 and a half cups of water
16 oz Colby jack cheese
Instructions:
(Directions from thawed)
Put 2 cups of rice in the Instant Pot along with the water
Pour both packets of seasoning over the rice
On top place Chicken, Corn, Rotel Tomatoes, Black Beans, Jalapeno’s, and Peppers
Leave it, do not stir
Place on manual LOW PRESSURE for 12 minutes
Do a quick release
Stir in the Cheese and enjoy!
(Directions to Freeze for a Freezer Meal)
Use a gallon size freezer bag
Add Chicken, tomatoes, beans, corn, seasonings, and peppers to the bag
Freeze for up to 6 months!
(To cook From Frozen)
Remove from freezer bag and place in the instant pot with 1 cup of water.
Cook on high pressure for 12 minutes with a natural release
You can serve on top of rice with veggies!
Instant Pot Three Envelope Pot Roast Sliders:
Pasta e Fagioli:
Ingredients:
1 pound of lean ground beef (FOR FREEZER MEAL: 1 bag of frozen ground beef)
2 tablespoons of extra virgin olive oil
1 tablespoon minced garlic
1 small diced onion
3 cups beef broth or stock
1 cup tomato sauce or soup
1 cup chopped celery
1 cup diced red bell pepper
1 cup diced yellow or orange bell pepper
2 cups chopped carrots
1 can of kidney beans rinsed and drained
1 cup ditalini pasta
1 tablespoon of Italian seasoning
1 teaspoon salt and pepper
Instructions:
Set Instant pot to sauté function
Add olive oil, garlic and onion. Cook until garlic is fragrant, and onion is translucent; about 2 minutes
Add ground beef. Cook until no longer pink, stirring regularly. Drain grease and return to pot.
Add tomato sauce or soup and broth.
Add celery, carrots, and peppers.
Add beans to mixture.
Add pasta
Add seasonings and mix everything together.
Set Instant Pot to high pressure and set the cook time for 5 minutes. Make sure venting is off. When timer goes off, do a quick release.
Serve and enjoy!

Instead of tomato soup add one container of Prego, less beef broth, one small can sauce, 2 tablespoons of Italian spices, garlic, one can white chili beans, and parmesan cheese, along with all you have. Trust me it is good. Celery, carrots, also. French garlic bread with butter and garlic and a small salad.
So for the fiesta chicken….in the description it’s says one pepper….but it’s not in the video?

Ketchup is very bad for you. It has high fructose corn syrup. That goes straight to you liver. Being young she is OK. If you have A1C issues ketchup is badddd!

I’ve tried the fiesta chicken recipe twice. I’m sorry to say it doesn’t work on either high or low pressure. I don’t think it’s my IP because it works fine for other recipes, really seem to struggle to create enough steam to create enough pressure and then just Burns the food. I even tried Upping the water to 4 cups, same result.

We're preparing for a long trip with our camper and are trying your freezer meals. The Fiesta Chicken was great!!! However we learned a few things, since we're trying to go from the freezer to the pot. 1st don't put the rice on the bottom, some of it burned being it was a frozen block. 2nd after cleaning the burned rice from the bottom of the pot (yep we got the Burn Notice), we put the now somewhat thawed meal in a Instapot basket with small holes in it and some feet on the bottom. We also added 2 more cups of water, since most was absorbed already. We learned some valuable stuff and think we can be successful with the next meal, by keeping the frozen blob off the bottom with a basket of some sort. All in all this was one very hardy meal. Thank you for taking the time to post it.

Hi! Question on the fiesta chicken recipe. The video shows your pressure is at high but the instructions in the notes say to use Low. If you get a chance, please clarify. BTW – my husband is soon retiring so he's going to take over the cooking chores. I'm trying to train him in on the instant pot and your recipes/videos are a huge help!
Followed the recipe exactly….I just tried the Fiesta chicken recipe got the burn notice turned it off added some water got the burn notice again so I finished cooking it in the microwave but it’s tasty!

I’m confused you said to cook on LOW pressure in the description but it appears your cooking it on high. Can you clarify?
So I did the Fiesta Chicken and froze it in a ziplock bag a few weeks ago. Decided to throw it in my IP today and guess what? Would not fit in my 6 qt because of the shape it froze into 😫 Ended up having to hack off the corners with a big knife and luckily it then fit into my 8 qt IP, phew!!!
Note to self, freeze it in a circular container that fit the IP😜

works great. i love that it has stainless steal pot inside https://www.youtube.com/post/UgkxG-7WiT7ocumjytOpHDFt632PL0pxXRAg and not the one with coating. we used to have a coated pot before, and the coating slowly peels, and i am sure went into the food that we cooked. Absolutely love stainless steel, and will not use a coated product again.This pot has many settings and many buttons, and i need to sit down with a manual to figure out which setting to use. I used the basic functions, and even though i am not technologically skilled, i turned it on and assembled it without any help.Very satisfied with this product overall.
I’m wondering if you used the whole box of that tiny pasta? You said you were putting all of it in the video and then the recipe says one cup. I’m making some right now and I only used one cup so I will see how mine turns out in a minute.😊
