What’s For Dinner? (#152) | Mexican Chicken Chowder | Easy Dinner Ideas!

Mexican Chicken Chowder:
2 cans cream of chicken soup
1 cup of cooked chopped chicken (or large can of canned chicken)
2 cups of milk
2 Tbs. minced onion
1 can of Rotel
1 Can whole kernel corn
8 oz of Monterey Jack cheese
Garlic powder, red pepper, additional spices to taste

Mix everything together in a large pot except the cheese over medium heat. Once the soup mixture is combined, add in cheese and stir until melted. Garnish with avocado and tortilla chips if desired.

We had Popeye's chicken meals and a big Easter candy tray for dessert. 😄 Definitely gonna try that chowder,as all of your recipes become favorites here.😊I've actually starting making meal plans based on what y'all have for dinner…who doesn't like yummy dishes that are easy to make?? ❤️

    That Easter dinner looks good! Nothing wrong with doing something different. I love desserts, as you know, so the peach cobbler caught my eye, haha
    Adding three pepper and onion blend to the jambalaya was a good idea. You are such an expert in doctoring up things! I am sure the sausage added a ton of flavor, too.
    The Mexican chicken chowder looked good! I do not always shred cheese, either. Actually, when I make pizza, I buy big blocks of cheese and just cut off large chunks and put them on the pizza. It works out fine!
    I am sure the corn chips would be good once they get soft in the soup.

  6. Didn't know that Howard was from Jamaica. Cool! That mac and cheese is calling our names, yum! Kung Pao Chicken is one of our favorite things but we've never made it at home. That pepper onion blend is one of our favorites! So great with so many dishes. 🙂 Fritos on the soup is brilliant!
