These grilled pork chops with cherry tomatoes topped with a dreamy garlic and thyme butter take less than 20 minutes from prep to table and feeds 4 people! PERFECT FOR WEEKNIGHTS!
Ingredients:
1. 4 TBSP Butter
2. 2-3 sprigs worth of fresh thyme leaves
3. 2-3 cloves of chopped garlic
4. 4 THICK Bone-in pork chops
5. 2lbs of cherry tomatoes
6. oil
7. Salt and pepper
Recipe Instructions:
1. Preheat grill
2. Dry pork chops with paper towels and season liberally with salt and pepper on both sides
3. Chop garlic and set aside in a bowl with butter and thyme
4. If using a cast iron skillet, wash your cherry tomatoes, add to skillet, drizzle with oil and dust with salt and pepper.
5. Cover the skillet with tin foil
6. If not using cast iron skillet, wrap all of your tomatoes with oil and salt and pepper in a double lined tin foil wrap and crumple the ends to seal.
7. place tomatoes and pork chops on the grill
8. Grill the chops 4-5 mins per side or until 140F internal temp. Rest for 5 mins
9. Shake the tomatoes every now and then to stir them up
10. Add butter, garlic and thyme to a pot to melt the butter and combine the garlic and thyme flavor.
11. Plate the chops, cover with tomatoes and butter sauce, DEVOUR!

I think you over cooked the chops. I like mine with a slight pink hue. Also, in the restaurant we would always get a paper towel, pour some oil on it, then wipe the grill to get that sexy maillard reaction.
