Hey friends! Today I have a simple meal prep with quick recipes you could use for guests or a large family like mine that will be gathering at a lake house air bnb for the weekend! As usual these ideas are budget friendly and could also fit into a weekly prep or monthly freezer meal prep! See you all in the comments!

|RECIPES|
|Our Favorite Chocolate Cake:|
-2 eggs
-1 cup oil (I prefer avocado oil)
-2 cups white sugar
-3/4 cup cocoa powder
-2cups white flour
-1tsp salt
-1tsp baking powder
-2tsp baking soda
-1cup milk
-1cup hot coffee
Instructions: Mix in order with coffee last. Add coffee slowly. Batter is thin. Bake at 350F for 35 to 40 mins in a 9×13 greased pan.

|Pumpkin Bread:|
-3 eggs well beaten
-3/4 cup oil (I prefer avocado oil)
-2 1/4 cup sugar
-2 1/4 cup canned pumpkin (Home Canned Pumpkin In This Video: )
-2 1/2 cups flour
-2 tsp baking powder
-1 1/2 tsp baking soda
-1 tsp salt
-1 tsp ground cinnamon
-1/2 tsp ground cloves
-1/2 tsp ground nutmeg
Instructions: Mix ingredients in order. Pour in two 9×5 loaf pans. Bake at 350F for 45 to 50 mins.

|Blondie Cookie Bars:|
-3/4 cup butter
-2 cup brown sugar
-2 eggs
-2 tsp vanilla
-2 cups flour
-1tsp baking powder
-1/2 tsp baking soda
-3/4 tsp salt
-1 bag chocolate chips
Instructions: Heat brown sugar and butter in a sauce pan until melted together. Set aside to cool slightly. Once cooled pour into mixing bowl. Add other ingredients in order. Press into a greased 11×15 pan and bake at 350F for 20 to 25 mins. Do not over bake. Cut into squares.

-Pretzels Baked at 250F for 40mins.
-Tomato Paste in 8oz jars: 1/2 tsp salt & 1&1/2 tsp lemon juice in the bottom of each jar before adding tomato paste. Process in a water bath for 30 mins.

Fermented Pickles:
-enough cucumbers for a quart jar
-1 tbsp mustard seed
-2 tbsp fresh dill chopped
-1 tbsp sea salt, celtic salt or pink salt
-1/4 cup whey (if not available use additional 1 tbsp salt)
-filtered water
Instructions: Place cucumbers in jar and add remaining ingredients. Water should fill jar leaving a 1″ headspace over cucumbers. Add a fermenting weight or spring and a vented lid. Keep at room temp for 2 to 3 days before moving to refrigerator.

  1. Hey Adaline, for the tomato sauce I wanted you to know that you don’t have to water bath them to seal. As an alternative to that cook your tomatoes the way you always do. put them in the jars and put the lids on than put the jars upside down as soon as possible. Keep then like that for 24 hours. Don’t move them until 24 hours and. Make sure before you fill your jars, jars and the lids are hot. Which you can simply heat them in your oven first. So yes My Mom has been using this method for decades and I’ve been doing it as well. it saves me time this way.

  2. I LOVE my Victorio strainer! Total game changer for canning. Not sure if you take your skins and run them back through, but if you do, you’ll get a lot out of that “waste”.

We don't have a garden at present, but are prepping one and although I put up green beans and tomatoes when I was a kid, I don't really remember the process! thank you for showing me some of the things that I need to know to preserve some of my produce! xoxo

  6. One thing I've learned is to use/grow paste tomatoes instead of slicers/juicing tomatoes. There's less simmering time because there is less juice. 🙂

  8. I will say, I’ve followed Acre Homestead for quite sometime and don’t get nearly the amount of knowledge as I do here. I mean, her channel was good in the beginning, but it’s gotten to be to chaotic for me to sit through and watch. Plus she has stopped interacting with her followers when anyone has a question or comment; she just ignores a lot of people. She wasn’t like that in the beginning.
    So I’m very very happy to have found your channel now, it’s much more relaxing and I feel I’m gaining so much new ideas as well as actually learning things I’ve never seen before. Everyone is just so kind here, and I’m living for the aesthetics too! 😊
