Meals from the pantry homestead cooking video! We have been trying to come up with different ways to cook with our winter squash because, as you know, we harvested a lot this year. This time we are cooking up a pantry meal with Canada Crookneck Squash. This is an easy squash recipe for savory crepes that works great as a dinner in itself! We just recently tried this squash recipe but highly recommend it as a hearty winter squash dish!
Recipe:
Make crespelles (Italian crepes); here is that recipe:
3 large eggs
3/4 cup flour
1/2 teaspoon Kosher salt
1 Tablespoon parsley
3 tablespoons melted butter
Blend/Wisk all ingredients except butter in blender and allow to rest for 30 minutes (not sure how necessary this part is). Brush pan with butter and over medium heat pour 1/4 cup of batter in. cook for approximately 1 minute or until the top is dry, then flip and cook another 20-30 seconds.
Then make the filling:
1 1/2 cups of squash puree (frozen works great)
1/2 cup Ricotta cheese
1/2 cup grated hard cheese (parmigiano)
nutmeg to taste
salt and pepper to taste
Roll crepes with 1/3 cup of filling, cover in 1 pint of tomato sauce, 1/4 cup shredded hard cheese and 1 tablespoon of basil or herbs of choice.
Bake at 375 for 30 minutes

As I saw you roll these crepes with squash I pictured them drizzled with maple syrup and then into the oven too! I love how you do so much as a team!
