Welcome back to another episode of Paleo with Pros! This time, I am joined today by Adam who is not only my personal trainer, but was also a professional chef for 9 years. Today, we’ll be making pancetta wrapped chicken stuffed with sun-dried tomatoes and curly kale served with a side of classic ratatouille.

This was absolutely delicious and a dish that can be prepared at home. Definitely a showstopper to impress your friends and family with.

– 9 large cherry tomatoes
– 2 and a 1/2 handfuls of curly kale
– 125g pancetta
– 1 aubergine
– 1 onion
– 120g sun-dried tomatoes
– 1 tablespoon of smoked paprika
– 3 garlic cloves
– 1 red pepper
– 1 green pepper
– 2 chilli peppers
– 2 chicken legs
– 1 tablespoon tomato puree
– A small handful of basil
– 1 courgette
