Chickpea chocolate chip cookies:
Ingredients:
1 14oz can chickpeas, drained and rinsed
½ cup creamy peanut butter
¼ cup maple syrup
2 tsp vanilla extract
½ tsp baking powder
½ tsp baking soda
¼ cup dark chocolate chips
Preheat oven to 350. Blend all ingredients except for the chocolate chips until smooth. Transfer the batter to a bowl and fold in the chocolate chips. Chill the mixture in the fridge for 15 minutes. Spoon the batter onto to a baking sheet and bake for 8 to 10 minutes.
