Looks awesome! I've become a vegan for cardio health reasons, so I'm gonna attempt a vegan version, sub some black and/or pinto beans, and maybe some lentils for the chicken and sausage protein element. Probably add some okra, maybe the combination okra+tomatoes that some grocery stores have. Prob have to add some more spices to make up for the absence of the sausage and its accompanying spiciness. One sliced jalapeno for sure; any ideas for other spices to make up for the missing sausage zip?
