Linguine Alfredo is a traditional pasta dish originating from Rome, Italy, early in the 20th century. Alfredo di Lelio crafted this recipe in his restaurant to fulfill his pregnant wife’s desire for a comforting and rich meal. The original formula is elegantly simple, featuring linguine coated in a velvety sauce made of butter and Parmesan cheese. This dish has evolved into a beloved classic globally, cherished for its simplicity and decadent taste.
Ingredients:
400g (14 oz) linguine pasta
6 tablespoons unsalted butter
1 cup freshly grated Parmesan cheese
Salt, to taste
Freshly ground black pepper, to taste
Preparation Guide:
Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine.
Prepare the Sauce: While the pasta cooks, melt the butter in a large pan over medium heat.
Combine Pasta and Sauce: Add the drained linguine to the pan with the melted butter. Toss well over low heat until the pasta is thoroughly coated.
Add Cheese: Remove the pan from the heat. Add the grated Parmesan cheese, salt, and freshly ground black pepper. Toss until the cheese melts and coats the linguine evenly. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
Serve: Transfer the linguine to serving dishes.

Wine Pairing:
The richness of Linguine Alfredo pairs wonderfully with wines boasting balanced acidity and fruitiness. A Chardonnay, with its creamy texture and subtle vanilla notes, complements the sauce beautifully. Alternatively, a light Pinot Noir can offer a delightful contrast with its bright acidity and red fruit flavors, cutting through the richness of the dish.
Linguine Alfredo is a comfort food, with its rich sauce enveloping perfectly cooked pasta. Its simplicity highlights the quality of the ingredients, promising indulgence and satisfaction, whether for a cozy dinner or a special occasion.
