I don’t know what happened, but I assume it’s my taste buds demanding they be coated in seasoned flour.
Something that I’m learning is to salt after I cook stuff like this. I like using runny egg yolks as a sauce too. Gizzards I roast with a whole chicken to make them super tender. That looks amazing, Alia!!
