Everyone likes crunchy cabbage so if you’ve never had it, it’s time to understand that this side dish is one of the most delicious you’ll ever try. But let’s start with the traditional method.
How to make:
In a bowl, add 2 tablespoons of olive oil and salt to taste. Also add black pepper to taste, chopped garlic, red pepper flakes and lemon juice for extra flavor, mix everything in a container and set aside.
Take a bunch of cabbage, preferably butter cabbage andPeel the leaves well, then remove the thickest central stems. Fold the leaves in half lengthwise and cut them into thin strips, (for the fancy ones, cut chiffonade).
In a large frying pan, heat the olive oil over medium heat with the chopped garlic, sauté until golden and then add the cabbage strips. Stir well so that the oil gets on all the leaves. Lower the heat and cook for 6 minutes or until the leaves are crispy and the edges begin to brown.
Remove and it’s time to adjust the salt and seasoning, add black pepper and if you want a spicy touch, add red pepper. Serve immediately, it’s great with rice, fish and of course, in a delicious feijoada!
Healthiest Crispy Kale:
You, like me, may be looking for a healthier version, so I’ll give you two alternatives, the first is by roasting the kale strips on a baking tray, after drizzling them with olive oil and seasoning with salt and pepper in an oven at 180ºC for around 10 to 15 minutes. Don’t forget to turn occasionally until they are as crispy as you want them.
Airfood – Crispy Cabbage in the Airfryer
And now for those who like Airfood, we get to the point, after all, those who follow me on Instagram (@panelaterapia) saw me testing this cabbage and it turned out really well! I made it using an oil-free fryer and it was dry, crispy and kept its green color, something that doesn’t happen when we fry it in oil.
Anyone who has never eaten crispy kale has no idea how good it is! It’s great for putting over risottos, soups, hominy, etc. I just added a little salt with garlic, of course the 100% natural ready-made seasoning from our partner Pitada Natural, but you can just add salt, or add a small clove of crushed garlic and mix.
There is no specific amount, just place the sliced and seasoned cabbage (avoid liquid seasonings such as vinegar or lemon) in the airfryer basket and turn it on to 200ºC. Every 5 minutes you open the basket and mix it so that all the cabbage becomes evenly crispy. It will take 10 to 20 minutes depending on the brand of your fryer and the amount of cabbage. It looks great!
If you store it in a closed container after it cools, it lasts for 24 hours but when you eat it you have to put it in the airfryer for 2 minutes again to get it crispy again.
